Veggie of the Week: Garlic

In this weeks box you’ll find garlic 2 ways! Garlic is a wonderfully versatile vegetable and you can enjoy it in many different forms. Wet garlic is a bulb of garlic picked before it is fully matured, you can eat it raw in its entirety or cook it for a vibrat flavour without the full punch of dried garlic. Garlic scapes are also in your box this week, these green stalks extend from the base of garlic plants, resembling oversized chives. Scapes are best kept in the fridge to make sure to lock in the freshness. You can use scapes in practically any way you would use garlic i.e sauces, salad dressings, hummus… the list is endless! For a bit of garlicky goodness, read on for our favourite recipes you can make at home from this weeks box goodies.

Garlic & Prawn Flatbread

First, make your flatbread – this takes no time at all, we use this recipe from BBC good food: https://www.bbc.co.uk/food/recipes/quick_flatbreads_43123

Once the flatbreads are cooked pop them in an oven to keep warm whilst you get on with the rest. Cook prawns in a skillet with butter and oil, garlic scapes/wet garlic and a bit of chilli for a kick. Brush a little tomato passata onto a flatbread and once prawns are cooked through place on top. We like ours with a good heap of rocket to give it a bit of crunch.

Scape Salad Dressing

Ingredients: 2 garlic scapes, coarsely chopped, 2 spring onions, coarsely chopped, 1 teaspoon honey, 2 teaspoons Dijon mustard, 1/4 cup red wine vinegar, 1 tablespoon lemon juice, salt and pepper to taste, 1/2 cup extra-virgin olive oil. Simply add all ingredients and blend until smooth!
