Veggie of the Week: Salad

Salad will always be a staple in the boxes. So, we thought we would pen down a few of our favourite leafy-lunches which use up a lot of what’s in the box:

Radish Salad

We are really happy with this weeks radish, they have been harvested for our CSA members at the perfect time. Did you know you can also eat the greens? They are young and tender, and taste sublime. Try dicing bulbs and mix with leaves then add a simple vinegerette dressing for a really beautiful radish salad.

Rocket & Beet Salad

This is our go to for a quick and easy lunch which is filling, healthy and delicious. You can really improvise with whatever you have leftover but we love rocket with manchego, toasted walnuts and finley sliced beetroot. Dress with a balsamic glaze and a sprinkle of sea salt.

Potato Salad

You can use your salad potatoes, onions and parsley for this classic. Boil potatoes until just cooked, drain and cool. Once potatoes are cold, mix with mayonnaise, sliced salad onions and chopped parsley.

Round two! Sam has recovered from his bout of flu so we are hosting Farm-To-Box this coming Sunday. If you want to come up earlier, lend a hand with some weeding / planting, you can volunteer in exchange for a voucher for 20% off food from The Box. Volunteering from 11am. Box food from 12pm.
