Veggie of the Week: Broccoli

The Italian word for Broccoli (calabrese) translates as “the flowering crest of a cabbage”, it is a giant floret composed of countless little flowers. If the plant was left in the ground, the floret would continue maturing and explode into a beautiful abundance of yellow flowers before going to seed. (Broccoli flowers are edible too and pretty tasty!)

These little trees are high in protein, fiber, vitamin C and are a good source of vitamin A, vitamin B6, potassium, and calcium. It’s also full of antioxidants and is good for your digestion. Try Broccoli salads, buttered broccoli side dishes and / or raw as a yummy crudité. It’s great practice to use the stalks too – often overlooked and discarded but just as tasty as the florets. The stalk can be cut into matchsticks and added to stir-fries or makes a great base for a quick broccoli and stilton soup, leaving the florets free for another dish.

Please note – some of our broccoli has the smallest bit of brown bead – a condition which mostly occurs in hot dry weather. It’s still totally edible, it just doesn’t look as verdant. Brown bead accounts for one third of broccoli rejections in supermarkets in the UK.
