Hello Summer!

Today’s box marks the start of the summer season! The beds are being turned and the spring sowings are coming to an end. We are in a transition period waiting for our summmer crop of french beans, summer squash, tomatoes etc. to come through, but it shouldn’t be too long. In the meantime we hope you enjoy the last of the kohlrabi, spring cabbage and rainbow chard!

Veggie of the Week: Spring Cabbage

Spring cabbage is full of flavour and packed with vitamins C, E and K, iron, potassium, fibre and calcium. Don’t discard the stems – just slice them more thinly than the green parts; they are actually sweeter than the leaf. We are loving this tender green in salads or cooked up as a side with fish or stir fry. A super easy way to make the most out of this fresh and vibrant green is to cook simply in butter or olive oil with a sprinkle of sea salt. You can spice things up a little by frying mustard seeds on a gentle heat with onion, garlic and ginger (you can also add tomato and chickpeas – see photo). Once soft, add the spring cabbage to coat in the spices. Gently fry everything until tender and season to serve.
