Veggie of the Week: Beetroot

This week, we shine the spotlight on beets! Bursting with earthy flavors and vibrant colors, beetroot is a nutritional powerhouse, brimming with vitamins, minerals, and antioxidants. We have been loving a classic beetroot and feta salad recently, recipe as follows:

2 beetroots, boiled and peeled | mixed salad | 50g goat cheese or feta, crumbled | Handful of walnuts, roughly chopped | Balsamic vinaigrette dressing

Step 1: Cut the boiled beetroots into bite-sized cubes and set aside.

Step 2: In a large salad bowl, mix the salad greens, crumbled goat cheese, and chopped walnuts. Add beetroot pieces once cool.

Step 3: Drizzle your favorite balsamic vinaigrette dressing over the salad to serve. (In our pic below we added pommegranate and sweet potato but these are optional!)
